Step 1

Harvesting

Coffee cherries are hand-picked at peak ripeness from plantations in tropical regions. Selective picking ensures only the reddest, most mature cherries are chosen, which directly impacts flavor quality.

Step 2

Processing & Drying

The outer fruit is removed through wet or dry processing. Beans are then fermented to break down mucilage, washed clean, and spread on raised drying beds under the sun for 1–2 weeks until moisture drops to 11%.

Step 3

Roasting

Green coffee beans are roasted at 200–230°C in large rotating drums. The Maillard reaction and caramelization develop over 600 aromatic compounds. Roast profiles range from light to dark depending on the desired flavor.

Step 4

Grinding & Brewing

Roasted beans are ground to a specific coarseness and brewed with hot water at scale in large industrial percolators. This produces a highly concentrated coffee extract that forms the base for instant coffee.

Step 5

Concentration

The brewed extract is concentrated by evaporating water under vacuum at low temperatures, or through freeze concentration where water is frozen out. This preserves delicate flavors while increasing coffee solids to 40–60%.

Step 6

Drying

The concentrate is transformed into dry granules through either spray drying—atomized into hot air at 250°C—or freeze drying, where it is frozen to −40°C, then sublimated under vacuum. Freeze drying preserves more aroma.

Step 7

Packaging

The final instant coffee granules are sealed in airtight containers with nitrogen flushing to prevent oxidation. Quality checks ensure consistent color, aroma, and dissolvability before distribution worldwide.
